
Preparation method
Preheat the oven to 200°C (400°F).
Cut the zucchini in half lengthwise and carefully remove the pulp. Sprinkle salt and pepper into the zucchini and half of the grated cheese.
Cut the bell pepper, onion, and tomato into cubes and the mushrooms into slices. Squeeze the garlic.
In a wok, fry the onion, zucchini pulp, bell pepper, tomato, garlic, and mushrooms, and add the herbs. Then fill the zucchini with this. Drizzle the olive oil and sprinkle the remaining grated cheese on top.
Place the stuffed courgettes in the oven dish and place them in the oven for 15 minutes.

– 2 tbsp extra virgin olive oil

– Himalayan or Celtic salt
*For the vegan version, use vegan cheese.
